Sunday night I was hungry but not starving so I decided to whip up a batch of fruit salsa. I normally make my own chips but on this lazy night I used the Cinnamon Sugar Pita chips. [Note: I like the homemade ones MUCH better] Super easy, yummy, semi-healthy (I'm not counting calories at this point in my life), and a great way to get fruits in your diet!
Fruity Salsa:
16 oz of frozen strawberries (I get mine sweetened) - I have used fresh too when they are in season
2 kiwis
3 apples, any nationality is fine
1 can of pineapple, this can also be fresh
1 tablespoon of brown sugar
1 mango
I cut up all of the fruit into little pieces, mix with the frozen strawberries and brown sugar.... and BAM fruit salsa perfection. After you mix it all together put it in the refrigerator for a little bit, let all of those super sweet flavors mix together.
Cinnamon Sugar Chips:
Flour tortillas
Cinnamon
Sugar
Butter
Preheat the oven for 350 degrees. Melt butter and smear all over the flour tortillas, sprinkle cinnamon and sugar (I like lots of cinnamon), then simple cut the tortilla like a pizza into small little chips. Spread all over a nonstick pan and bake. I typically bake them for 5 to 10 minutes. Don't forget to let these babies cool off - they are hot and when they cool they get crispier and much yummier. This does make a mess making these chips - so if you are in a super hurry buy them but if you can spare the time and the Lysol, making them is totally worth it!

Boy OH Boy!
Dear Cupcake,
On December 20th, I woke up from a not so great night of sleep and excitedly got ready for my day. Your Dad and I were so excited to find out who you really were. We were so anxious to know if our home was going to be full of barbies, pink clothes, Disney Princesses OR were we going to have tractors, toy cars, and camouflage? I tried to find a super cute outfit, even though I have had a hard time fitting into most articles of clothing in my closet. I always have good intentions of snapping of photo during special events [even though often times I forget].
This appointment was the first one we had arrived on time for. Needless to say - I was about to pee my pants. They make you drink a lot of liquids before your appointment and not pee for 2 hours. The way you dance your little jig on my bladder, I was miserable after the first 30 minutes. I didn't eat anything full of sugar or drink a Mountain Dew - like some had suggested, I figured since I feel you moving often, you would know when it was time for you to shine!
Into the ultrasound room we went - we really like the ultrasound tech [she is the one that showed us to you for the very first time]. Shirt came up, jelly went on, and I saw you! We sat in shock, not sure what to say or what to do -- just watching you move around inside my belly. So amazing, such a blessing, words can't describe it. After about 5 minutes of waiting - she finally told us YOU ARE A BOY! A BOY! You looked healthy, had all your fingers and toes, four chambers of your heart and a perfectly built spine. Good job, Son. We make a pretty good team developing you into such a handsome and fine young man.
Your Dad says I have to quit calling your Cupcake - I think that a Mom can call her son whatever she wants.... so for now, you are my Cupcake. Your Dad and Uncles are calling you John Rambo - so don't worry - you will have a manly nickname as well.
Everyone is so excited to meet you! Keep up the good work and keep growing strong!
